Ingredients
- 2 medium plantains overripe mashed
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/3 cup brown sugar
- 1/4 cup red palm oil**
- 1.5 cups plant based milk
Instructions
- Pre-heat your oven to 350°F
- In a bowl, mix all your dry ingredients
- Once all the dry ingredients are combined, add your wet ingredients.
- Mix everything well
- Pour the mixture into a well-oiled loaf pan
- Bake for 45 minutes or use a toothpick to gage if it's done by poking it into the centre and checking to see if it comes out dry
- Let it cool down completely
- Slice and enjoy with some butter.
