Ingredients

  • 2 medium plantains overripe mashed
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/3 cup brown sugar
  • 1/4 cup red palm oil**
  • 1.5 cups plant based milk

Instructions

  • Pre-heat your oven to 350°F
  • In a bowl, mix all your dry ingredients
  • Once all the dry ingredients are combined, add your wet ingredients.
  • Mix everything well
  • Pour the mixture into a well-oiled loaf pan
  • Bake for 45 minutes or use a toothpick to gage if it's done by poking it into the centre and checking to see if it comes out dry
  • Let it cool down completely
  • Slice and enjoy with some butter.
