Ingredients

  • 1 large ripe plantain
  • 1 cup of all-purpose flour
  • 1 tsp of salt
  • 2 tbsp of water

Instructions

  • Peel plantain and cut into 1-inch thick medallions
  • Steam in a pot. Steaming is better than boiling because we do not want to introduce extra liquid into the dough
  • The plantains should take about 5-10 minutes to cook. To check that they are ready, they should be soft, bright yellow and the core is cooked through. (if the core still looks pink, the plantain is not cooked)
  • Mash the plantains in a bowl
  • Add your flour and salt to the bowl and combine well. You do not want to overwork the dough
  • As you are combining the flour and plantain, add the water slowly till everything combines into a ball. You may not need all the water, or you may need a little bit more.
  • Once everything has come together, cut the dough into four pieces then roll each piece into sticks
  • Cut the sticks into 1.5-inch pieces to form your gnocchi
  • At this point, bring a pot of water to boil.
  • As the water is boiling, you can shape your gnocchi using a fork (demonstrated in the video)
  • Once you are done shaping the gnocchi, place them in the boiling water.
  • The gnocchi is ready when they start floating to the top. Remove the gnocchi and set them aside.
  • Once it is all boiled, you are ready to serve with your sauce of choice.
