Ingredients
- 3 very ripe plantains
- 1/2 onion
- 1 thumb size ginger
- 1 scotch bonnet pepper or habenero
- 1/2 tsp of black pepper
- 1/4 tsp of ground cloves
- 1 tsp all purpose seasoning
- 3 calabash nutmegs
- 3 grains of selim
- 1/3 tsp grains of paradise
- salt to taste
- 4 tbsp of all purpose flour
- 2 tbsp of red palm oil
Instructions
- Grind all the spices together
- Grind the onions, ginger and scotch bonnet together
- Mix the spices and onion paste together
- Mash the plantains till you get a semi smooth paste
- Mix the plantains with the onion and spice mix
- Season with salt to taste
- Mix in the all purpose flour
- Fry in a non stick pan with a little bit of the red palm oil.
- Scoop about 1/4 cup worth of batter onto your pan and flatten with the back of a spatula till it is about 1 cm thick.
- You want the pancakes to fry at medium to low heat till the top of the pancake doesn't look raw (about 4-5 minutes)
- Flip and let it cook on the other side for another 4 minutes
- Take off the heat
- Repet till all your batter is cooked
